Well us dogs, me (Stellar) and Venus hear the roll thing tearing in the kitchen. We don’t like it. They put the clingy stuff over the food so we can’t get those lovely smells. Then they carry it outside, put it on a table and slide the door shut. I like it when she opens the oven door and takes out the tray. It’s hot. Mmm the smells!
Me-Here are two dishes for a buffet which can be cooked and frozen in advance and refreshed
Polenta Pizza (for coeliacs too)
Slowly fry the onions and peppers in olive oil. Mix loose polenta from the packet with boiling water. Stir until soft. Add grated parmesan. Spread on a baking tray. Put tomato paste, fried mixture, oregano and any left overs or sliced meat(optional), mozzarella, sun dried tomatoes, roasted peppers and rocket on top. Season. Bake on medium heat for about 20 – 40 minutes.
Filo Pastry Tart
Peel, chop and boil sweet potato until tender. Grease a round dish and melt some butter. Brush the butter on several layers of pastry sheets and lay them across the dish and over the edge. On top lay sweet potato, tomato passata, basil and chorizo pieces(optional). Season. Fold over the pastry from the edge of the dish to cover. Brush with butter. Bake on medium heat for about 20 – 40 minutes.
